This is more of a photo scrapbook and a place to write (and vent) my thoughts and feelings and brag about my grandkids.. I am a 60 something wife, mom & grandma. I've been married to my best friend Walt since 1977. The most important thing in my life is family. We have been blessed with some great kids, our daughter Kayci, son Cody, our awesome grandson Jesse, our precious granddaughters Cassandra and Chelsea and our newest grandson John. We are currently raising our grandson Jesse and dealing with things such as Autism & ADHD. We have lived in northern Arizona for most of the last 35 years and love it here. We've had our ups & downs ~ but life is good... I'll add a little here - my sweetheart and best friend Walt passed away unexpectedly January 8, 2014. He will be missed by many.

Yummy Cake
Oh my goodness, this is the best cake ever!
It even beats out soggy coconut cake (sorry Mom)
I can't take credit for it, I got it from a blog I love.
Here's the recipe:
Cake:
1 box yellow cake mix
1 stick marg (softened)
1 can (14 oz) Mandarin Oranges, drained 1/2 c juice reserved
4 eggs
1 tsp vanilla

Topping:
1 pkg 4oz Instant Vanilla pudding
1 can (20 oz) crushed pinapple,juice reservered
1/2 c powdered sugar
4 oz Cool Whip

Preheat oven to 350. Combine cake mix, marg, 1/2 c juice from Mandarin oranges, eggs and vanilla. Beat for 4 minutes on med high. Add oranges and beat again until pieces are small. Bake in greased & floured 13x9 pan for 30 minutes. Cool completely.
When cake is cool blend juice from drained pinapple with instant pudding mix, add powdered sugar & mix, then mix in Cool Whip. Stir in drained pineapple, spread on cooled cake & refrigerate for several hours.
